Under the direction of Executive Chef Graeme Heenan this restaurant celebrates Gippsland finest dry aged grass-fed Black Angus beef as well as dry aged lamb and venison, all procured from the countries finest suppliers.

Graeme Heenan has established unique relationships with a network of boutique growers and producers throughout South Gippsland whilst sourcing unique ingredients from his own kitchen garden to ensure the menu represents the best of what is available locally.

Graeme's cooking philosophy is to keep it simple. Preparing the best produce maturely and elegantly with plenty of flavour.
